SPICY TOM KHA MUSSEL SOUP

Ingredients:

500 g. (17.5 ounces) blue mussels
1 pack Thai Meal Kit – Tom Kha Kai
1 ½ cup of water
1 stick lemon glass (optional)
3 kaffir leaves (optional)
4-5 fresh chilies (optional)Any kind of mussels or clams can be used instead of blue mussel. Adding fresh lemon glass and kaffir leaves can reduce a fishy taste of seafood.

Cooking Directions:
  1. In a stock pot, add ¾ cup of water to cook Thai Meal Kit – Tom Kha Kai. Follow a few cooking steps on the package (do not add meat).
  2. Cover with mussels, add lemon glass, kaffir leaves, fresh chilies and continue to boil for about 4 to 6 minutes or until all the mussels have opened. Discard any mussels that haven’t opened.
